I bought a boneless pork shoulder and have marinated it overnight in some bone dust Rub. I also want to keep everything together since the two pieces although they're still attached one is much skinnier than the other.
I'm curious if I should take the twine off or leave it on for the cooking
 
Hello SmokingJoeJoe.  Here is my opinion for what it is worth.  Others may have different advice.  This is only my opinion.  I would leave it together.  You will have different tastes and textures and doneness to the meat.  Just my opinion.  Keep Smokin!

Thanks. I'm currently at the stall process of the pork and have left it all together so we'll see how it goes in a few more hours
