Hi All.
I havn't give up the idea of teaching you all to eat Fermented black beans

First I marinated the boneless pork loin in a mix of fermented black beans with garlic, cruched black pepper, salt, honey,aple vinager and olive oil.

After wiping of the marinate it goes in the smoker.

4 hour's later at a temp of 225F



After 12 hour's at a internal temp of 175F I wrapped it in tinfoil and let it cool.

Sliced it the next day.

And together with a potato sallad and some vegetables it was a greate cold meal.

That looks great! I love the bark on that! Nice job. Please explain fermented beans to us ignorant folk.
 
The Black beans are a chinese speciallity, they are fantastic to use in a marinade. Perfect for barbecue, and I've found out they are greate in smoked meat as well

Give it a try, you will find them in asian grosery shops.

Fermented black beans...well if you say they are that good I'll grab a jar the next time I go to the Asian section of the International Market.
I saw that jar said "in garlic sauce", that actually sounds like it might be good.
 
Stickan, that was one of the nicest plates of food I've seen! Your meat looked wonderful and tasty and please share the recipe for those potatoes.

I am curious as to what exactly the fermented black beans impart to the meat during the marinade?

Rivet asked for a recipe of the potatoes and here it is:



Stickan’s Potato salad



Ingredients:
2 pounds boiled cold potatoes
1 small apple
2 inch of fresh cucumber
2 inch of fresh leek
A small bundle of dill
½ cup of crème fraiche
½ cup of wipe creame
1 tsp of Dijon mustard
1 tsp of cracked black pepper
1 tsp salt
1 tbsp of pickled cucumber

How to do:
Cut the potatoes in cubes
Peel the apple and take out the apple core
Cut the apple in small cubes
Cut the fresh cucumber in small cubes
Mince the leek and the dill
Mince the pickled cucumber
Beat the wiped cream slightly

Mix all the ingredients carefully in a bowl so the potatoes don’t get mashed.
Adjust the amount of wipe creame and spices to your taste.

Hey Thanks, Stickan, I appreciate the recipe! I saved it to my file and look forward to making it. I am guessing white cream is the same as heavy cream here in USA?
 
That's right Rivet, Wipe cream = heavy cream
