Hey guys.  First time smoking a bone in prime rib.  Picked out a nice two bone, 6.7 lbs choice prime rib roast to treat the wife and family on Mother's Day.  Roasted some cauliflower and broccoli along with sautéed onion and mushrooms (sorry no pics of the sides).  Dinner was fantastic and lots of left overs for a few sammiches this week.  I have made some pretty good stuff since picking up the RT smoker, but this might be top of the list.

Smoker set at 225 for the entire cook.  Pulled the roast when IT was 225.  FTC for 1.5 hours prior to slicing up.

Dressed and ready for the grill.  Rubbed with EVOO, a light dusting of Penzeys English Prime Rib Rub and a healthy combo of Ron's Steakhouse Rub and Ribs Within Wahoo Beef Rub:

IT at 225 and ready to pull:

First cut:

Half the roast sliced and ready for eatin, hmmm hmmm good:

That PR looks wonderful, I bet the wife and family loved it.
Beautiful sliced Qview.

I am clearly confused. That doesn't look like any IT of 225 that I've ever seen. What am I misunderstanding here?
Yeah, I'm a little thrown off too... Cause that looks like Medium Rare 130'-135' IT.

Yikees, I over cooked my PR and did not even know it.  Sorry guys.  Pulled when RT was 125 and sliced at 135 after FTC.
