Birthday prime rib and cheesy potatoes

Great birthday today. I am a teacher so I am home with my 1 1/2 year old son and starting a smoke for my birthday dinner. I just put in a 4lb chunk of rib roast. Should be to medium rare in a couple of hours. Also made up a pan of funeral potatoes to have with it. I will put up pics later tonight.
 
Happy Birthday! Can't think of a finer way to spend the day than smoking and hanging with the little one.

Ok, I have to ask...what are funeral potatoes?

Overall it was a great birthday with my son all day and he and my wife tonight. The rain throughout the afternoon make the smoke a little bit tougher than usual. You can see in my one picture where I had to improvise with a foiled bread pan on a can of fruit to shield my top vent from the rain. My prime rib ended up alright, but a bit tougher than I like my prime rib. I think it was partially due to a piece of meat that wasn't as well marbled as I like and second because it was taking a lot longer than usual when I have done prime rib before so I had to bump it up to 260 from 225 for the last hour so that we could eat dinner. The potatoes were also really good. I hadn't made them before and will probably cook the onions before they go into the potatoes next time. They were still a bit crunchy. Overall, decent prime rib is still better than 99 percent of the meals I normally eat. :)

Known by other names but generally referred to as funeral potatoes. Traditionally served at funerals or parties in Utah.

26oz bag of frozen hash browns
1 can condensed cream of chicken soup
16oz sour cream
1/2C chopped onion
salt & pepper to taste
2C cheddar cheese
2C corn flakes, crushed
2T butter

Mix the soup, onions and cream cheese till blended.
Mix the hash browns with half the cheese and press into the bottom of a 9x13 pan. Spread the creamed mixture over top of the potatoes.
Melt the butter and mix with the corn flakes, spread evenly over the top of the dish. Top with remaining cheese and bake in a preheated oven @350 for 35-45 minutes.
