This past Saturday was my daughters 2nd birthday and I wanted to cook a brisket for the first time, so I decided to cook it the day before. I got the fire going and the meat was on about 7:45am at 250 degrees, then let it cook till I hit 175 degrees and foiled it and back it went in the smoker at 300 till I reached an internal temp of about 195 degrees. I chose to let it sit overnight in the refrigerator and had my father slice it with his new meat slicer and then transfer the meat into the crock pot, I think it came out good for my first brisket. enjoy the pictures.
