my parents came to visit a couple weekends ago, and they've never had anything out of my smoker so I decided I was going to do ribs, got a couple racks of spares, and a rack of beef back ribs. Figured while I was at it I'd go ahead and take my first stab at "pastrami" as well (I now see I missed a few spices to make a true pastrami, but... well. I don't care

). and then figured, what the heck, if I'm gonna be smoking, I might as well make it a good one, and I'd been wanting to treat the 2 people I work with, so I grabbed a rack of baby backs outa the freezer too to take them for lunch (I'm out with a busted elbow, so it was kind of a makin' up for the extra work they're havin' to do while I'm gone too). everything came out really good, and I got lots of very positive feed back. My boss even pronounced them the best ribs in town, which really made me feel good because he's not one to say what he doesn't mean, and he LOVES good food.

anyway, why am I still typing? Here's the goods:

first batch of stuff to go on that morning: BB, plain sausage to go with eggs for breakfast when everyone else gets up, and the corned beef, rubbed with the spice pack (fry test was good to go)

forgive me, I was a bit rushed when these got done, and I had them cut and packed up to deliver before I remembered to snap a pic. I took the ribs, a couple servings of baked beans that sat under the ribs catching drippings, cornbread muffins and individual peach cobblers to them. when I got home from the delivery I put the spares on.

Here's the "pastrami" right after it came off the smoker, I wrapped it in tin foil, and a couple of towels to rest for about an hour, then into the fridge to firm up:

Here it is all sliced up, came out really good. ended up with 3 bags, by the end of that day only one had survived, and that's only because I hid it in the deep freeze!

if you're paying close attention you might have noticed some beef "short ribs" I tossed on at the last minute. I wasn't happy with those though. they shrank up a LOT, and they were pretty tough. Everything else I was very happy with, and very tired too (try this with your right (or left if you're a southpaw) hand stuck in your pocket sometime). It was an adventure I would not have been able to complete if not for my loving and gracious wife.
