So I have a cousin in the navy whose birthday just so happens to be on St Patricks day and he'll be on leave for it this year. Guess who got the lucky draw too cook for said event? Me that's right you all are so smart! Well it's going to be full of young twenty something's about fifty I think. I'm figuring pulled beef (chuckies) spare ribs and chicken. Also will do some Dutch's beans and some mac&cheese. Question to the regular caterers how much meat should I get for this crowd?

My daughters bday is st paddy's day as well!

I'd be interested in the answers you receive but I'd be guessing about a pound of raw meat per person... I'd also suggest buying a case of brined whole chickens from Costco for the smoke. Easy, tasty and you can pick up the morning of the party and throw right on the smoker! You might need both racks in your mini for this one...

If you're going for the wow factor you could make your own corned beef and smoke it...

I'll be watching this one!!!

Right now I'm thinking about buying a whole Chuck roll and cutting it up. Ten slabs and five chickens. I find chicken doesn't really get eaten that much for some reason. The minis big brother will be handling this one! [emoji]128513[/emoji]

You say you're having about 50 , 20y/o's , so with all the Nibbling ,Drinking and more Nibbling , I'd count on 1/3 to 1/2 Lb. / person. So a 10 Lb. Butt

will give 7 Lbs. meat , I'd say 8 Butts of 10Lb. or so. Sam's has some good ones.

Rarebits's Pastrami idea is great... a must have on St. Pat's Day ( or Corned Beef).

The rest you plan on will be nice over the top goodies.

What ever you do , have fun and . . .
 
Don't forget the beans, Tater salad, cole slaw, bread and sweets
