Big Hello from South Dakota!

  1. I just found this site the other day. I like the fact that you cover other areas of cooking other than just bbq. I am currently in the process of closing my bbq restaurant after almost 4 years of cooking and catering. I still plan on doing some limited catering. I also bottle and sell my own bbq sauce and line of bbq seasonings. I am not a cert.KCBS judge but have judged at several KCBS events. I am also on the planning board for the Great Aberdeen Pig Out and am in charge of the bbq cooking contests.

    I have a large custom built offset on a 5X8 trailer, a Cookshack SM150, Cookshack SM08, Bandera offset, and an ECB.
    I also love to cook over open fires and I do alot of Dutch oven cooking.

    Now that my friend....is a SMOKER ! How many pounds of ribs will that monster do at once? Choice looking unit....my dream....
     
  13. Most ribs I have ever done at one time was about 150lbs that I did for an Easter Seals Ribfest. I do 150lbs of brisket, 120 lbs of pork butts, and 8 chickens, with alot of room leftover, about every three days. I can also do three whole hogs at 140lbs each, on it at one time.

    Welcome to the SMF family Midnight , What small town is SD are you from , there are alot of them out there ! HA HA I was born in Aberdeen and my folks are from Ipswich and Rosce . Still have relatives around Aderdeen and Watertown .
