Good afternoon guys. Though I am an avid reader of the forums I do not get a lot of opportunity to share. However, today I am doing a 14 butt smoke so I figured I would reintroduce myself. First thing you should know is I am a huge UDS fan. I absolutely love the way they smoke. My smoke style really works well with an UDS. Normally a pulled pork smoke for me takes 12 to 16 hrs depending on the size. As say it will be done when it is done. I don't wrap just let it roll. Good sweet bark is the trophy I'm looking for at the end of a long smoke.Fat side up or down I don't even bother to look when I put them on. As the pictures below will show some are on fat up and some are on fat down. Spending a lazy day with friends and family by the pool and smelling the wafts of smoke gently rolling by is the best. Knowing that at the end of a day I get to chow down is the icing on the cake. So if you are every in the central Florida area

and smell the smoke swing on by..I'll make sure I have enough on for you.

  I promise I messed a bunch up before I got it right. Next time i do ribs I'm going to try your membrane on method.  That is one my favorite things about BBQ. There is always something new to try.

Well, 13.5 hrs and and all is rolling smoke. Inters range from 179 to 187 in the 3 I have stabbed. One on bottom rack, one one top rack, and one on middle rack. Should be ready to take off in 1 to 2 more hours for a 1 o'clock lunch.

 
That's an awesome looking smoker! You guys are gonna have a heck of a feast. Nice job!
 
Been considering getting a UDS just for fun. Your big ugly is probably the nicest one I've seen. Did you make it? Do you use strictly charcoal? The capacity to fit 14 pork butts is sweet!

What was your yield out of all those butts? The only drawback I see with a uds is I do like to pan pork butts after about 160 to 170 internal to keep all the juices need extra room for that.
