Hey Everyone - First time posting and a long time reader and follower of the site.

I am going to be smoking some whole chickens Thursday night and freezing them. What is the best way to reheat them? Should i smoke them all the way through to safe temps?

My initial thoughts were to let them defrost, reheat in a 400 degree oven in a sheet pan wrapped in foil with a little bit of apple juice for 20 minutes, and then sauce the last 10 minutes uncovered to crisp up the skin, and then a light layer of sauce. thoughts?

Thanks in advance.

First  of all, welcome to the site!

This is a good question for Chef Jimmy J.

He should be along shortly.

Cook the birds to an IT of 160, cool and freeze. Defrost in the Refer and reheat, uncovered in a 325 oven. They will heat in about 30 minutes, sauce and turn up the heat to caramelize and serve. Welcome to SMF...JJ
