thanks for the reassurance! South FLA, the kick in the pants was what I needed! What a crock! I'm certainly committed to figuring all this out. I'm getting a coupla new thermometers, lowering my temp and waiting it out, I am stubborn.

I have about 20 lbs of beef ribs already smoked, so I'll go back to pork! Again, thanks for the 'ribbing' about the 'crock' sofla and the advice tonto, and the info msmith, I'll use it and give'r a whirl.
