Beginner in Kentucky

Hello all my name is Justin and my wife and I are totally new to smoking so we will be looking for tips from those of you with years of experience. We live in Ashland, KY and just purchased a Masterbuilt 20070411.  Seasoned it yesterday and are trying chicken thighs and vegetables for our first effort.  Can anyone with a Masterbuilt tell me how the meat probe on the control panel works?  Not sure if I should trust what it tells me is the temperature of the meat if it doesn't touch the meat in any way?

You have to put the meat probe in the center of the thickest part of the meat to get an accurate reading.
 
Thanks Smokin Al.  I got to looking at the manual earlier today and low and behold I see where the probe is located inside the smoker.  I guess one will need to be quick to check the temp of the meat without losing all the temperature that was built up in the smoker already.  First dinner with the smoker was quite a success.

First off welcome to SMF there Justin n Wife. You'll really like this place for there are a bunch of really good folks here that would just love to help you with just about anything to do with smoking meat. HELLO , and WELCOME  JUSTIN,  from Rockport, Texas (that's along the coastal bend of Texas).

To answer your question about the temp probe, I have the Master Forge Double Door Propane Smoker, and the temp meter (mounted on the upper door) is just that, and it was almost 50* off. 

If your temp meter has a probe connected by a wire to the meter, the best way to check the accuracy is to stick the probe into some boiling water and then mark the meter accordingly.

If the meter does not have a connecting wire, than it is only sensing the internal temp of the smoker, and not the meat. 

Your best bet than is to get a seperate meter, one with a probe (that is inserted into the meat) for the proper meat temps and safety.
