I don't know if any more verbal or written tips will help but I'm at my wits end on removing the membrane on my baby back ribs.  Nothing seems to work.  Is there any visual tutorials here?  Frustration is high at the moment so any help would be greatly appreciated.

I run a butter knife up the second bone from the small end under the membrane and lift it away from the rib.  Then grab a piece of paper towel and pull it away.

Is there a skin under the membrane?  When I go under the membrane at a bone with a knife, the resulting flap is thicker than the material shown in the videos.

YES... There is a Thick Connective tissue that attaches the meat to and covers the bones. This is topped by the Membrane and is thinner. The membrane is removable the thick connective tissue is not.

I smoked a couple Racks about two weeks ago. The membrane was dead set on staying put so I said the Heck with it and left it on...NO ONE NOTICED! Every body ate to the bone and not a word was said. I WILL NEVER BOTHER REMOVING IT AGAIN!...JJ

Aw heck I just work an edge loose with my thumbnail and grasp it with a piece of paper towel to keep it from slipping from my grip.

Sometimes it doesn't matter other times it will cause the rack to curl...if you can't get it off, you can at least score it between th rib sections.Just sayin'

I too use a butter knife and beforehand I run warm water over the membrane for about 30 secs, it seems to loosen it somewhat.  Works good for me.

  • Remove this.
  • Not this.

Also sometimes the silver skin may be removed already, I have seen this many times where 1 rack out of three have the silver skin removed.
