Beer Can Chicken Mexican Casserole, very simple

Tried something new with a beer can chicken I smoked over the weekend and thought I'd share it:
I removed all the meat and shredded it. (of course I couldn't resist a few 'samples' as I worked

) Threw it in a skillet with 2 cans of Rotel, a medium diced onion, a medium diced bell pepper, a diced jalepeno pepper, a little fresh chopped cilantro, and an envelope of taco seasoning. While these ingredients were heating and being mixed, I took a large casserole dish and put a layer of broken nacho cheese tortilla chips in the bottem. After the skillet mixture was heated, I poured it over the chips and spread it out nicely. Another layer of chips, cover the whole thing with shredded mexican blend cheese, and into the oven for about 20 minutes. WOW! The smokey flaver of the chicken made this simple casserole amazing. A big hit with my crew.

Oops, sorry Bassman, you'll have to picture this one in your mind. I can't find the USB cord for Mrs. Red's camera.
 
You're right, it is a simple and tasty casserole. Gloria has been making it for 15 years, only difference is she adds a can of cream of mushroom soup.
