Got a deal on a 18.5" WSM off Craigslist yesterday.  With whole chickens being on sale for $0.99/lb I figured if I screwed it up I wouldn't be out a whole lot.

Outside temp was 58, cloudy and the wind was about 8-12 mph.


1100 - Rubbed down, placed on cans and went back in the fridge.

The top vent stayed fully open the entire time.

I was going to jump the temp after two hours to try and crisp the skin up a little, but just couldn't get the temp to quit dropping.  Used the minion method and had plenty of fuel.  Any suggestions?  Still tasted great though.  Pretty happy for the first time using it.
