hey folks this is lance from down in nw florida (mechanic butcher). I trully love smokin and been at it for about 8 years. I got a couple of favorite smoke rituals and indulge my family likewise.  I'm 35, a self employed mechanic, married and keepin down the house with my 4 year old girl. So long story short  i've never bought a smoker but have made a pretty practical and favored settup myself. I use an old 1920's hearth with a webber on the exhaust with a temp gauge. real easy to make and works great. I have to replace the webber every couple of years but there are plenty of the legless type in the garbage. anyway, i'm self employed and like to fish boat make fast things and brew really good beer. and oh yeah smoke some kicken pastrami with an everyday corned beef, 8 hour ribs, ground pepper rolled ground sausage, only good smoked fish to me is salmon and just about everything you can smoke otherwise.
