I live in Terrell, TX in an apartment (recently divorced) with a very small porch.

My history for smoking food includes mostly large offset self built smokers and self built upright charcoal burners. I have built a lot of smokers over the years. Now that I am in an apartment with no place for a large smoker I gave my latest offset to my son. I decided to get an electric smoker since I no longer need to cook for the masses and am limited on space.

I still have access to my two workshops at my old home. I have a 20X20 knife making shop and a 20x30 welding shop. Unfortunately it is a 30 mile drive to get there. If I need to go to the shop I try to have several things to do to justify the drive. No more running out to the shop for 5 minutes.

Anyway, I bought a MES30 and am already starting the modifications to it. I plan on doing all mods (hopefully) when it is still new and clean. I have already started a build thread located here:

Drop by and make suggestions or hopefully what I am doing will help others in some way.
