I have everything I need to make some hot beef sticks except knowledge. I have looked at lots of posts and websites and still not clear on what to use for meat. I have a hot stick kit from LEM that includes everything except the meat. I am planing on using 4lbs of 90/10 ground beef and 1lb bulk sausage all mixed well with the seasonings. Will this work? Any better suggestions for meat without grinding it?
 
I have read somewhere that 80/20 meat blend is a good mix for snack sticks , so given what you are using for beef 90/10 and mixing with the sausage , you should be pretty well perfect IMO , don't forget the q-view !
 
Would I be better off using just 80/20 burger? The sausage I have is not really flavord much. I will be using the LEM hot stick mix and was thinking the seasonings in that would pretty much take over the way they will taste.
 
If your sausage is not flavoured much , I can't see an issue IMHO , I say go for it , you'll be fine with what ya have , show us the q-view

I would stay away from 90/10 burger I made batch once that was so lean it tasted great and chewed like saw dust. Being a diabetic I also asked mt dietician about whether or not I could consume it. she said as long as I stayed in the 85/15 range I can have 4 oz as trade of for my meat portions. As for your pork check you local markets they some times have ground pork with no seasoning in it. You will pay a little more but if you only need a small batch is worth it. Then again you don't have to add pork you can keep it strictly beef. Myself I use burger for my venison and have gotten away from pork. The best part is experimenting and using your friends as guinni pigs.
 
I wont use my friends as guinni pigs, but I have 3 boys all living at home, When I make jerky it goes so fast I wonderer if I really made some or not. Between them eating like pigs and my CRS, I will never know the truth. Well I hope I can make em up next weekend. I might be busy helping the in-laws move.
 
I made some this summer using 90+% lean bull burger. Just like JustSmokes, they tasted good, but pretty dry.
