Beef short ribs on the Mini-WSM (and injected Hot wings)

Been smokin all morning in the GOSM. So I might as well smoke dinner too. Fired up the Mini and its rolling along @ 250* TBS, mixture of mesquite lump, Kingsford briquettes, and apple wood. Probably do the 3-2-1 method, or might not foil. Rubbed the meat with some rub I made a long time ago. Hot wings will go on the last two hours!

Dohhhhhhh!! I was going to take a picture when I foiled the rack and I forgot!! I added some more lump as I was getting some temp swings. In another hour I'll put the injected hot wings on!

Scarbelly type injected wings. Franks, mustard, butter, some other spices. Would have used some fire water but others are eating these too

Shoot its barely afternoon here!! Going on in about 5 minutes! they'll be on the bottom rack of the mini-wsm, ribs on the top!

Can't wait to see them ribs.  Sure have a lot of meat on 'em.  We can't find beef ribs like that around here!

The ones they had in the meat section at the grocery store weren't great, so I asked the butcher if they had any uncut in the back. He brought out a cryo-pac with four racks. I asked for two of the four! Any cut you want they usually have, in the back, just ask!

Ribs will come out of the foil soon, here's a few pics of the wings going in!

Looks great to me!  Saw some of the beef ribs at Publix yesterday.  I did stop an jot down the price.  Dont know if its a good one or not....$2.99 per pound...the package was 3.44 lbs...and the price was $10.29.  They also had fresh picnics for $1.19 per pound.  Didn't know about that either.  Just looking to see the costs right now.

I'd say yes, the crappy ones they had displayed that were trimmed when I picked these up were $4.99 #. I usually get a better price on the un-cut, but the normal butcher wasn't there

  Buy both good deal! I bought picnic last night for my summer sausage at Whole foods, was $3.50ish a pound. Sounds like I need to move South and East

I've never had good luck with wings on the bbq but yours look fabulous!! I could help polish off those ribs too

Jetman, I was thinking that baby back ribs, hot wings, and not so hot wings would be on the menu for Paulina this year. If I do Depoe Bay boat show I was thinking about bringing the Mini-WSM and doing a batch of wings. I've had great success doing the wings on gas smoker this was my first attempt on the Mini. I should have pulled them about 30 minutes earlier! Oh well, still really good, injecting them is the secret for sure, thanks Scarbelly!!!

Wings at Depoe would be a treat for sure but can you (we) make enough to satisfy the Coot herd ?? One other problem, all that smoke is going to cause security problems at the park and Jack will wonder why no one is looking at wooden boats and the park is overflowing ;-)

Well my thoughts on that are it will be a small group gathering for the wings! I have a feeling that not everyone in that group can stomach the heat! Since wings don't take to long I'd probably do it later in the day on Saturday.

I know one thing, I have enough left over from last night for a good snack tonight!!!
 
That is an impressive rib rack. The picture of the cut rib, the smoke ring is very prounced. you just know all that connective tissue has melted into mouth candy. The only thing wrong with that rib is I am not there. Simple slaw is plenty. The meal is about that awesome looking rib. Really well done Dirtsailor. I would give you two thumbs up about now if I knew how.

I am one of those panty waists that enjoys a wing better if there is some hide left on my tongue. My taste buds just don't function after a blast of atomic heat.
