picked up a couple of racks of beef shorties and wet aged them for two weeks.  trimmed, rubbed and ready for the smoker.


9.5 hours later they are out and rested.


Carved up and ready to go.  very moist and great bark.


plated up with some potatoes roasted in the smoker, under the beef ribs, some beans, and some sweet potato that was roasted whole in the smoker then mashed.  washed down with plenty of cold beer.
