I'm looking for a good dry rub to throw on a beef roast that I'm going to smoke in the middle of the week.  I love in Southcoast Mass., and we're on a nasty cold stretch and can't smoke until the middle of the week.  I have no idea what to use for a dry rub and need some suggestions please.  I'd like to get the dry rub on this thing asap.

Salt/Cracked Black Pepper and some powdered Onion and Garlic.Period. Beef likes Black Pepper. This simple rub is a great last minute fix also;someone comes over with a meal to Smoke and you don't have a ready Rub...

Enjoy, have fun and...

Couldn't agree more, OSBBQ!  Keep it simple, keep it savory for beef!  The only tweak I might make is rubbing with fresh garlic, if I have it on hand...

I really like the salt, pepper and gerlic rub on some really good meat but most hunks I like a mixture of Old Bay and brown sugar. Now I use that on most of my meats that I smoke. It has a good amount of spices and some good sweetness with some heat on the back side.

SPOG w/ some fresh rosemary laid across the roast is great

Splash it with worshy sauce, rub with salt, pepper, and garlic powder and stuff it in the fridge overnight. Keep it simple and it will reward you beyond belief!

All the above are good suggestions.

here is my beef rub

Rub

1 – Bottle Kroger stake seasoning (size of bottle escapes me, none in cupboard to check. Think its 8 or 12 oz)

1/4 cup dark brown sugar

1 Tbsp Beau Monde seasoning (secret ingredient) (leave this out and rub totally changes)

1 Tbsp dry mustard

1 Tbsp smoked paprika

2 tsp garlic powder

1 1/2 tsp chili powder

1 1/2 tsp onion powder

1 1/2 tsp Italian seasoning

1 1/2   tsp Lawry’s seasoning salt

1 tsp cumin

1 tsp ground coriander

1/2 tsp ground ginger

Mix everything together sample, add chipotle chili pepper to adjust heat as needed. I always add 1/2 Tbsp then sample, and go from there.

1/2 - 2 Tbsp chipotle chili pepper (heat varies with each bottle and brand)

Check out adamsgoods.com, he  makes a variety of rubs and salts for all different applications.  I got a sampler pack for my birthday and recently got more of the steak and BBQ rubs for xmas.  Good luck.
