I would like to do some dino bones for the first time this weekend.  Do you buy beef short ribs or beef back ribs?

What is the difference?  What does everyone do?

How do you cook them 3-2-1?

Hey Aces,

You can try any type of ribs you want - whatever you can find is more like it.  I use Beef Spares but I have to pick through them if my favorite butcher isn't around because they pocket out the meat so much when trimming.  I've also cooked beef back ribs too.  The spares are the dino bone that you are talking about.

I use the 3-2-1 method for beef ribs - and cook around 225F.  Typically I soak in worsty overnight and then go heavy on black pepper, salt and a little garlic powder right before going on the grate.  I add the brown sugar and apple juice during the 2 hours in foil.  I sauce during the rest.
 
If you ask the butcher to give you the ribs that they trim off when they sell boneless ribeyes, those are the best. We smoke them 3-2-1, but since they are prime rib bones you have more options. They can be eaten rare & still be tender.
 
I called every butcher in town.  Frankly I am more confused than ever.  Some people say back ribs, some say spares, some say short ribs even though they are longer than the back ribs....Ugh.

So I bought both.  They have marinated over night in worcestershire and apple juice over night.  I'm going to put a rub on them today until tomorrow.
 
I can't add much to what Al & meatinc said. They about covered it.

I prefer the 3-2-1 if they are in 3 or more bone sections, with a decent amount of meat on them.

If they are pre-cut individually, or 2 bone sections, or very thin (not much meat), I would go 2-2-1, so they don't get dry.

I don't do Dinos as they are usually all bone and the cost is outrageous unless you have your own beef.Think the last ones I did were in '72,good but the meal busted me.

The last beef ribs I did came from Winn Dixie...

They were very meaty. I don't buy the ones that are thin on the meat..

Coated them with SPOG and ran them about 2.5 hours at 245.

Turned out fabulous!!!

They are all good.  The rib roast(prime rib) bones are back rib bones. Dino bones are the equivalent of beef spareribs and are cut lower on the animal.  The short ribs are cut further forward in the chuck area.

Maybe Pops will come by and give us a Pro explanation.

Meaty dino bones do not need the 3-2-1. I rarely do any beef ribs more that 4 1/2 hours. More like a 2 1/2 - 1 1/2- 1/2.

You can also intercept your butcher before he make Short Ribs and buy the Long Bone Short Ribs. These are not all bone, but gotta agree, the price can be outrageous at times.

 I am pretty much the same with Beef backed ribs. I marinate them in mojo Crillio, then place them in an aluminum with a little mojo in the bottom. Smoke them for the 4 1/2 hours and spoon the mojo mixture over them as you rotate them in the pan.
