Beef ribs with some meat

Not something you see all the time. Wife found some on sale at Wal-mart for just over $4.00 a rack. Took a chance on two.


Marinaded over night in Goya Chipote Mojo Crillio. Normally not a big fan of the Goya Mojo but wanted to try the Chipolte. Also did a modified Jeff's rub a few hours before going on the smoker.

Choice of wood was Cherry and Oak. Figured around 4 to 4 1/2 hours. I don't like my steaks well done, neither my beef ribs.


Did a 2.5-1.5-.25  Still had a nice bite and were quite flavorful.

Nice looking Beef ribs. Been craving some. Better go talk to my butcher and get me some. At our local grocery store they get the ribs in (two full racks to a pack) then the trim them for the case. I just ask for the untrimmed ones they go back and bring me out a cryo pack and off I go!
