I have befriended a butcher he gets some great meat the ribs were awesome but I do prefer pork ribs

 All the Butchers around here are (Stick - in - the - Muds) . Don't want to or too lazy

And my home own Grocer doesn't do custom cutting .They don't even have Beef Ribs in the show cases , but I've seen some after they finish them , Naked ,

totally Naked , Skinflints cut off all they can to charge for their time and add it to the Burger . Wish I were still in Texas where I could get what I wanted

I haven't had big beef ribs in years all you can find here are short ribs . I ordered a prime rib once and they asked if I wants the rib off it and the cut them perfect for grilling. One of the best choices I made that year and to take the Giant over the Pats in the super bowl.

I'm a seasoned butcher here and here is how to look for meaty back ribs.  First of all we can all agree that they are hard to find LOL.  Ok, then what?  If a place cuts bone in rib steaks or cuts standing rib roasts [or prime rib roasts], then there is a chance you can snag one.  One way is when places get "long" on standing ribs they bone out some for boneless rib eye and put the back ribs out for sale.  The other is after holidays are over, often times standing rib roasts that are left over from sales are boned out and the back ribs are put out for sale.  So keep an eye out all the time.  I have bought a few like this every year.

Another way to get great beef ribs is to buy the "beef plate" that short ribs are cut from.  If your place sells short ribs, they have the beef plates in the back cooler.  Ask for one or two and you should get a discount in price since you are going to trim them if needed..  Reinhard

Got some more last weekend to smoke today unfortunately the weather is not ideal so going to do them in the oven [emoji]128542[/emoji]
