Beef rib confusion.

I''ve been wanting to try beef back ribs for a while and Jeff's last weekly post gave me the nudge. Apparently there are different kinds of "back ribs". The ones from Kroger don't look like the ones from Marsh (Marsh likes to cut things in pieces to avoid sticker shock and the cutter assured me the small packages amounted to a whole "rack". I don't trust the kid and miss the last cutter.).


Can anyone give a dummy some guidance?

SM, Your marsh ribs look like a "plate short rib", nice and meaty in 3 rib packs. The Kroger ribs are called "shiners", meaning the bone shows up and shines. The butcher has trimmed them up and sold the meat in other varieties. All I can find around here are shiners which are tasty but your Marsh ribs will be better.Low and slow !

Thanks, CM, that clears things up a bit.I made a full plate of short ribs last summer (I had to special order them at a meat shop) and they were a LOT meatier. I'll just toss some thighs in to take up the slack and save the good ones for another day :-)
 
 Shop at Marsh. Kroeger ribs are what is left after the processors cut Boneless Rib Roasts. Tasty but not worth the price IMO...JJ

Kroger used to be the "go to" place around here for meat, but they've really back slid the last couple of years. They do have good sales now and then. The only reason I shopped there today was T-Bones for $5.99#.
 
 your  best bet would be look around for some local butcher shops they are your best chance  to find decent  back rib racks  the big commercial supermarkets  and abattoirs   strip the meat off them to add more to prime rib cuts

Yeah, ck, there's a shop not far from me. That's where I got the full plate short ribs last year. $30. They cut me a Tri Tip because that's not a standard cut around here. $25. They charged me $4.50# for pork back fat. They charged me $4.50# for pork belly (then I found I could get better ones at Costco for $2.99). They're way too proud of themselves as far as I'm concerned.

I guess I was the first person to ask for it, same with the belly. Kind of threw them for a loop. They didn't have a "code" to run it through checkout, so they ran as "miscellaneous pork", which was $4.50. Actually all I asked for was pork fat, but there was a nice strip of back fat with it.
