I did this a few weeks ago and it went really well. I can handle Pork, chicken, and fish very well but I always struggle with beef. maybe because it costs more and I get nervous, I'm not sure! I read through Smokin' Al's Loin thread and decided to follow it using a 4 lb loin. I was not planning to make the Aus Jus but I had the ingredients and it was so easy I figured why not? I had one tough spot. My girls and I like our beef medium rare and my wife likes it medium well. I decided to stick with Al's directions and if I needed to I would cook my wifes a bit longer...I have no idea how I was going to do that.

It worked out great! My wife ate plenty and it made unbelievable sandwiches for the next few days. I used a beef rub I like and worcestershire sauce as Al did because I like what it does for Beef. Not sure why but this stuff tasted even better sliced thin!

Looks great!

If it is too rare for your wife, just give her slices a short trip through some medium hot (not boiling) au jus!
