LOL----No I saw another mistake too.

You wasted a vacuum seal bag, by only keeping 1 piece out.

You'll be opening at least one of those bags real soon---Maybe even before it's frozen!!

Thanks Welsh and Joe for the compliment   and Points.  If the stick burners would take time to get to know their smoker anybody can do it, start with a small fire add as needed and DAMPER CONTROL.

Great job Gary! I had some Keilbasa spice and made mine with all pork. It was back when I was thinking that making sausages to taste like stop bought was what I was supposed to do. I mean who knew you could break away from the herd! I really wish I had made mine a beef/pork mix. I have yet to make any sausage except for pork. I am just a neophyte.

Its hard to believe its your maiden flight from the looks of it. Seriously well done.
 
Thank you Foam, Mainly did beef because my wife likes it the best, next time pork and I'll grind it myself.  Probably try Hot Links Next.

OK   Verdict is in.   I've been married long enough to know when my wife says "it's good"  that means she likes it so so. But when she says "I really like the flavor" and "You are going to have to give the kids some" and I say I really didn't make that much ! and then she says " We can make some more"   She really, really likes it.  We had Kielbasa sandwiches for supper

It was a hit
