Beef Enchiladas, thanks Dutch

They sounded so good I decided to try Dutch's recipe for beef enchiladas.

My brother asked me if I would coat it in my chipotle rub (he says he would eat whole spoonfuls of it) and so I did.

I have tried this rub on brisket, and pulled pork and love it on both. (slightly altered/improved from before)
1T kosher salt
2t CBP (cracked black pepper)
1t white pepper
2t Hungarian paprika
2 dried chipotles, ground (about 1-1 1/2T)
1 1/2t brown sugar
1t dried oregano
2t garlic powder
1/2T mustard powder

Sorry for the lack of prep pics.
Brought to 180 on the smoker and wrapped until 205 then pulled.

Threw a thing of store bought rice (dry) into the smoker before I cooked it for the meal


Not very smoky, a little but I guess 1 hour wasn't nearly long enough to pick up a good smoke flavor.

Followed the preparation instructions and used mozz and cheddar/pepper jack cheese on the top.



So good, so tender. The enchilada sauce I bought was rather lacking but I made up for that with more chipotle rub

Man those sure look good. Combines two of my favorite foods, BBQ & Mexican.

The smoked dry rice idea sounds great and it looked good finished too. Thanks for the rub recipe again, I've saved it where I can find it now!

Definetly cudo to dutch and you for introducing those lovely morsals of yummy. I really like the smoked rice idea.

i have made those before and they are great!!! nice looking hunk of meat and also nice looking rub, thks for sharing recipie too!!! i tried to give you points but i guess i have to spread it around more... so instead

Hey fire...

Fantastic looking meal. I love Pulled Pork Enchiladas, but beef sounds really good too. Your dry rice smoke has got me thinking about making Dirty rice in the smoker...you know, hydrating it and letting it simmer in the smoker to cook and also take on some delicious smoke. In the past, I have smoked some stuffed peppers, and they took smoke pretty well....between the rice idea and the smoked eggs from earlier, nice job Fire. Points to you.

Wow those look good. I'm definitely going to try those!

I find that adding a little bit of cinnamon (believe it or not) can really jazz up the store bought enchilada sauce - sounds weird, but I learned it from a really good Mexican restaurant down here.
