Good morning fellow smokers. Today, I'm smoking Back Beef ribs on my Traeger using the 3-2-1 method and using a simple Jack Danials beef rub. However, I will be adding 1 extra hour in the foil process (so it will be 3-3-1 method) so I can have more tender ribs. Will this hurt the cooking process? I would like to use Apple Cider as my liquid for the foil. But I was also told beer is good as well. Your thoughts please?
 
I think 3 hours in the foil will be too much.

I would check them at the 2 hour mark & then decide if you want to go longer.

You can use any liquid you want in the foil. I use water.

3:2:1 is perfect in my mind for beef ribs. Only ribs I foil are beef ribs. The braise really does help.

Beef broth is a good choice if you don't want to alter the beef flavor. A good stout, Porter, or red wine are good too, but will change the flavor of the beef.
