Hi folks,picked up a two pack of beef back ribs at wally yesterday. cooked one rack,will be cooking the other today.They came out great.Made a few changes.First I changed the fuel.Instead of KO brqs I used a cmbo of RO lump and STUBBS charcoal brqs.Very pleased with the results.After a 3 1/2 hour cook I have a lot of unburned fuel left.Will use these for todays smoke.On cooker for 2 hours,foiled about 45 min,sauced back on for about another 20 min..One small piece of apple and cherry wood.Two ribs went on naked,3 had montreal steak seasoning,rest had combo rub.Temp in cooker between 250-275..Ribs were tender.not falling off the bone,just right.looking forward to cooking the 2nd rack today.. will report back with results,and hopefully pics of both cooks..y"all have a great smoking weekend..

Just threw 2 racks of beef back ribs on the smoker with a whole chicken and 10lbs of bologna.  Its gonna be a great day!
