Hi everyone! I am a complete newbie to smoking meats and last weekend's first attempt at ribs was mediocre, so I jumped online and found this forum - looks like a great resource.

I grew up in Kansas and enjoyed Kansas City barbecue for many years. However, I now live in Arizona and after years of frustration in trying to find Kansas City level barbecue in Scottsdale, my wife talked me into buying a smoker and trying to make my own. Some of my favorite joints in Kansas City include Rosedale and Oklahoma Joes.

Though I am a purist at heart, the laziness factor came on strong, and I elected to purchase a digital Bradley smoker from Costco. That is my only equipment, except for a wireless meat thermometer that monitors the smoker temperature along with the meat.
