Tomorrow, I'm hosting a potluck and smoking the meat. I made it an option to help pay for the meat rather than bring a side dish to pass. Well, lots of people decided to take the easy way out.
I decided there needed to be some baked beans, so I was on a mission. I read a post here about looking for recipes, no need to reinvent the wheel. Hmm... I thought... Half the fun I'm having is reinventing the wheel.
So, I searched recipes, saw things I liked, things I didn't and finally came up with this:
5lakes Beans
1 Lb Bacon, cut into squares
1 large can (31 oz) pork & beans
2 cans (15 oz each) dark red kidney beans
1 large can (20 oz) crushed pineapple in juice (NOT syrup)
1 large onion, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1/2 cup Jeff's Goodness Gracious Sakes Alive BBQ sauce
Fry bacon until almost crispy. Remove the bacon but leave the grease in the pan. Sautee the onion and peppers in the bacon grease until the onion is translucent.
Drain the veggies and dump the grease.
Put everything into a large pot or dutch oven. Bring to a boil and reduce to simmer until your desired consistency is reached.
In retrospect, for next time, I think I will drain the beans before adding them. The pineapple had plenty of juice. Maybe one can of kidney beans with it's liquid.
