Bean Stew with Andouille and Peppers

Some of these are Cranberry beans from last years garden





I soak these overnight in the fridge-way my family does these type of beans.Then added some ham chunks-I save the bone for soups- and cooked till beans are soft




Cooked-i reserve the bean water to add at end




I reduce 2 quarts of my canned tomatoes with sauteed garlic,shallots etc.

Andouille with pecan




Grabbed some fresh peppers from garden for some crunch and added reserved bean water.It is always excellent.The dutch oven will be working overtime in bed tonite...





Finally found some spare ribs for 1.89 pound(no solution) and whats left is a side for that smoke this week....
 
Good Grief-o-rama! WOW, that's some good looking beans there ALX. Nothing better than "real" beans you got to soak, and from your garden too... No worries on the store-bought Andouille, it's pretty good considereing we're a looong way from Cajun country.

Thanks friend.It would be pretty much impossible to keep the garden,yard -life in general full of energy- if i did not eat a few meals that stuck to the old ribs now and again.......

Oh great big WOW for the beans they look abosoluty out of this world. It would be nice to have fresh andouille sausage but then it would also be nice to have fresh beans like that alx. Everything always taste better if it's from fresh ingredents.

Thanks guys.Had a big bowl for breakfast and didn't even stop for lunch working in garden today.Next time gonna double smoke the ham-the hint of pecan really bloomed overnight.
