I'm using B&B charcoal briquettes and hickory chunks. 


Using the standard 2-2-1 method for smoking baby backs here at 225 - 250 degrees. 

The ribs turned out GREAT.  More importantly the smoker performed flawlessly. It held the heat for the entire 5 hours needing only minor adjustments to the vents to maintain temp during the last hour or so. No charcoal was added and plenty was left in the hopper.

I think you are finally getting the hang of this smoking deal. At least, you're beginnng to learn a few things. Those bones sure do look awesome.

Thank you my friend!  That lil unit is easy to run. Just the right size for Teri and I. 
 
 
Awesome looking ribs!! What kinda rib rack is that? I've been looking for one that'll fit in my mini.
It's one I've had for a while. I like it because it has higher sides.  It fit the 14" grate perfectly. And they don't cost an arm and a leg.

When I saw your swimming pool, I thought "WOW!!  Liquid water you don't have to chop your way into.  What a unique concept."

LOL ... My in-laws are from South Dakota. Back in the late 70's he was traveling down to Texas in January.  It rained one day and he notice that the water was running in the gutter. In January!  Never seen that before!  LOL He moved his family here 2 months later.
