Well, after fighting the wind most of the day,I finished the baby backs about 1 1/2 Hrs after the wife got home from work. We ate supper around 6:30 PM. When I first started out about noon, I couldn't get the temp in the smoker to go over 180 degrees because of the wind. After about an hour of looking for something to block the wind, I finally used some 12x12 tiles that fit into our deck table. I placed a few around the bottom of the smoker and it worked.

Finally got the temp up to 225 and it pretty much stayed there give or take a few degrees. I was going to try the 2-2-1 method for the baby backs, but by the time I finished it was more like 3-2-1 method. I used oak for a base wood and then added apple as needed. This was my first try at Baby Back Ribs and I have to tell you they turned out wonderful. They were moist, tender, and Jeff's rub was the bomb.

Thanks to this forum and the great people on here that gave me encouragement to undertake this smoke.

I have a question!!?? Why is there a bone on the bottom that looks like it still has meat on it? also there is a bean left too.

Looks like it was darn good. The bones are pretty clean. Got a rack of bbs on the smoker right now , and london broil marinating.

Dang! I know what you're talking about with the wind, and all! The area that we live in is sometimes refered to as "Baja Wyoming"! The last time that happened, we just turned the picnic table up on end to block the smoker! Worked out just fine...

Great Q-shots. Gotta go find something to eat now...
