Thanks to all of you who took the time to answer my questions,Ive got a new electric smoker from masterbuilt and not quite sure what to do with it ,but im going to jump in with all of your info and give it my best.
.....The only time you want to soak the chips is when you add them directly to charcoal on a grill. Reason being they will burn up so fast. When you use a smoker, it burns your chips slower with much less airflow, consequently they will smoke and smolder without burning up like wood in an incinerator.....You may want to check out Todds AMNPS. They also sell the Maverick ET-732 dual probe meat/bbq thermometer. Many of the folks on this site use these products.
