  1. I got my first smoker an electric masterbuilt,instuctions so vague,do I soak the chips or not,Help I have know idea what Im doing

    No need to soak the chips, it just slows down the arrival of the smoke.

      Welcome to the forum! Be sure to stop by the new members ares and introduce yourself. Meantime, electric smokers normally don't need the chips soaked. Also, check out the 5 day e-course. Lot's of good info there. Happy smoking!

    Don't soak chips. 

    Do run the top vent fully open when smoking.

    Don't rely on the built in thermometer for internal temp .

     Don't rely on the control panel cooking temp to be accurate.

     Once you check your cooking temp w/ a thermometer that you know is right ,then you know how much to add or subtract from what the MES says.

    Do the same w/ your probe on the MES.

    Cook something and check it w/ known thermo so you can see how far off (if any ) your MES probe is.

     The MES probe is usually pretty close but the cooking temp on the display has been know to be off more than 15 degrees.

    This can make a big difference in your cooking times.

  7. Thanks to all of you who took the time to answer my questions,Ive got a new electric smoker from masterbuilt and not quite sure what to do with it ,but im going to jump in with all of your info and give it my best.
     
  8. Welcome to SMF....[​IMG].....The only time you want to soak the chips is when you add them directly to charcoal on a grill. Reason being they will burn up so fast. When you use a smoker, it burns your chips slower with much less airflow, consequently they will smoke and smolder without burning up like wood in an incinerator.....You may want to check out Todds AMNPS.     They also sell the Maverick ET-732 dual probe meat/bbq thermometer. Many of the folks on this site use these products.
