BBQ sauce for chicken, from a Jamaican cookbook

From a little book titled Jamaican Cookery, Recipes From Old Jamaican Grandmothers (Heritage Publishers Kingston Jamaica 1981 - 1997)

CHICKEN IN BARBECUE SAUCE

1 cup catsup sauce

1 medium onion finely chopped

2 tbsp tarragon

3 tbsp vinegar

2 tbsp lemon juice

2 tbsp brown sugar

1/2 tsp ground mustard

1 tbsp celery salt

1/8 tsp cayenne pepper

1 cup water

2 - 3 tbsp Worcestershire sauce

2 tbsp fat-free margarine [??]

4 boneless, skinless chicken breasts

In a large bowl, combine all ingredients except margarine and chicken. Heat margarine in a large skillet. Saute chicken for 5 minutes. Place chicken in a shallow baking pan. Pre-heat oven, cover and bake for 1.5 hours. Baste often with sauce. There will be enough sauce to bake several more chicken breasts if desired. Serves 4.
