BBQ salad recipe ideas?

Hi all,

Going on vacation soon and I'd like to have something simple that we can eat along the road and at lunch (going to the beach and want something simple to eat on sandwiches).

I was thinking of just smoking a butt and making BBQ sandwiches but have no way to heat them on the road.

Then the thought occurred to me that I could make a tuna or chicken salad like concoction to just spread cold on a sandwich and eat it.  However, adding mayo and typical tuna salad sandwich ingredients to BBQ doesn't sound appealing.

Does anyone have a recipe for BBQsalad sandwiches?

I make ham salad from left over hams....just grind the ham...add pickle relish and some mayo.  Wouldn't that be yummy!  Could add some BBQ sauce for some zip too!

I have some left over pp...may try that my self!

There is no reason not to make PP BBQ and eat it cold. I dot it regularly. I just mix it with a little BBQ sauce, some diced pickles, and chopped onions, put it in a plastic tub with a lid and keep it in the fridge. Every time I walk by I grab a hamburg bun and plop a little cold BBW on it and go. Works out great.

I love ham salad.  one of my favorites.  I put hard boiled eggs in mine too.

Yeah, I have had PP cold as well.  Does not sound appetizing but it is pretty good.
 
If pork is the way you want to go here are some of my thoughts......

Pulled pork has a lot of fat. The type of fat that can be be non appealing to eat when cold. You could drain it off when warm, but that takes time and you will need to dress it with a dressing right away or it will seem dry. If you choose that direction I would go with a lighter dressing that has a lot of punch, like a chimichurri style ( it is bright citrus and herb flavor) or if a BBQ sauce profile direction is what you want then use your favorite BBQ sauce as a base and make a vinegrette out of it......

Another direction you can go is sliced. I use pork loin and season heavily with SPOG and smoke to 145 let chill and slice very thin, build sandwich and dress with your choice of dressing or spread.....


Just a couple thoughts..........

I do like me some ham salad..... I make mine like Kat does. I have never tried it with egg, but sounds very good to me..........

I like PP cold as well. I normally don't mix the sauce until I eat it.  I can hardly stay out of the refrigerator.
