more of a leftover dish vs a side dish.

Had some leftover spare rib meat, and some babyback rib meat leftover from the past few days. Pulled the meat off the bone and made some killer fried rice.

Made the rice in the rice cooker last night, and left it uncovered in the fridge overnight to dry out. Really made a difference

Ingredients were basic, veg. oil, carrots, celery, onion, garlic, 5 spice, black pepper, soy sauce, hoisin, ground ginger, and scrambled egg. Topped the dish with a fried egg.

Something about fried rice I love, eating out, or at home, pork fried rice is my favorite, but I also like chicken,

It turns out really nice with some leftover smoked rib meat. Big tip is to cook the rice the day before, and use it cold and dried out from the fridge.
 
everything is better with a fried egg on top. got that twist from a Thai website.
 
Looks great...I know fried rice for sure since Im in Singapore half the year and thats some of the best looking rice Ive seen...Great way to use left over smoke pork too

Finally got mine how I wanted it this batch. crisp, and no clumping.
 
had to have a littel for a snack this a.m., I really liked the 2 different rib meats(spares & bb's).
 
That's some mighty nice pork fried rice! Looks awesome Jim. I too just love fried rice -- and what a wonderful way to use some left overs, and combine two favorite food groups.

Having the wok screaming hot really helps,

I got the wok to smoke before adding 3 tbsp veg. oil. then added my carrots, celery, onion and garlic, and sauteed for maybe a minute, then crumbled in teh cold, day old rice and cooked it for maybe 4 minutes, scraping & turning the rice and veg often. Then added in the smoked pork,1-1/2 tbsp hoisin, black pepper, 5 spice, ground ginger, 2 tsp soy sauce and Tony C's. Turned down the heat to medium, and let it cook for a couple minutes. I did the scrambled eggs in a seperate pan, and added them last. Then topped the serving with the fried egg.
