BBQ Chicken Pizza

I was pressed for time today (no long smoke), so I figured I would try my first BBQ pizza.

Smoked some chicken drums and thighs, removed the skin and pulled the meat. Added my BBQ sauce, and mixed it all up. Rolled out my dough and grilled it on one side, then added the Shredded BBQ chicken, Onions, red pepper and garlic (sauteed in EVOO) then topped with Mozz, sharp cheddar, and pecorino ramano cheeses. Grilled it for 15 min at 400 degrees with a smoke box filled with maple shards.

The crust was nice and crisp, and the overall flavor was awesome. Smokiness was good and complimented the already smoked chicken. All in all a success. I think I will be doing all of my pizza this way from now on. Enjoy the q-view!!!

Thanks! I have never had chicken on pizza before this evening. I thought it was pretty good. I think next time I might try pulled pork, and add more BBQ sauce. The dough was pre made from a local pizza shop. I buy them from the owner a few at a time and freeze them.
 
Smoked meat is good on pizza, I like to do chicken with Alfredo sauce instead of tomato sauce. Pulled pork is good on both---yum!
