A definite rookie here...name is Rich...hunt and fish a ton.  Asked for a smoker at Christmas...lo and behold...

Given a BBQ-Pro vertical gas...seasoned last night...apple wood soaking now...whole chickens going on around 2:30 - 3:00pm tomorrow...GULP...any main points to look for, feel free...will be searching most of the night on this site...

Excited, nervous, and anxious about my first one tomorrow....yep all of the above.  Don't expect much...will be happy with edible.

Be gentle...

Don't worry about gentle, huntsman, plenty of good folks and good info here. Might want to use the search function. Everything you want to know is probably in there. Also look up Jeffs 5 day FREE e course. You'll be smoking like a pro in no time. Good to have you on board.

Just keep your temps on the high side 275/300 deg, you want to get through the danger zone 40 to 140 within 4 hrs. And all will taste fantastic!! Good luck and post pics

Rich , chicken is good any way you smoke it . my biggest focal point about chicken is making sure it gets fully cooked to @165* ,enjoy !

Hello and welcome from East Texas. This is a great site, lots of information and great people that are willing to throw in their two cents worth on about anything.
