Hi everyone,

I just bought an electric Master Built Electric Smoker, some Apple and Cherry Wood chips and a giant Boston Butt, some ribs, chicken drums and I'm ready to get started.

I've smoked some meat, mostly ribs, with a friend on his electric smoker once or twice. I've prepared St. Louis style ribs form a big rack, removing the membrane etc. I've made rubs and cooked a few times, but I am pretty new and looking for advice.

I got the Amazin' Pellet smoker too so I can smoke that Boston Butt for hours without attending to it constantly. At 10 lbs it's going to be the biggest thing I ever smoked.

I'm looking for guidance to do meat, poultry, fish and cheese, but I also brew beer and wold like to smoke my own malt.

I'm hoping to find some good 'getting started' material here.

About anything you wanna know about smoking/grilling/curing/brining/cutting or slicing
