Had a bunch of chicken left from my weekend smoke (almost like I planned it that way!
), and needed to whip up a quick dinner. Made some rice and dumped 2-3 Tbsp. of my Baja Rub, and 2 Tbsp. of butter into the water as it cooked. For the rest of it I sauteed:
1 red bell pepper
1 med. yellow onion
3 mushrooms
2 C left over Baja Chicken cut into cubes
Once the onions, peppers, and shrooms started to caramelize I added 1 bottle of alfredo sauce, 1 C sour cream, and 1-2 Tbsp. of Baja seasoning. Once the sauce was hot it got dumped over the rice and a bag of frozen peas was added - give it a good stir, add 1 1/2 cups of shredded cheese and give it another good stir. Then pop it into a 350° oven for 30 min, pull it out and top it with another 1/2 C of shredded cheese, bake for another 15 min.
(try not to drool on it as you pull it out of the oven!

.... plated up with some extra hot sauce on hand for those of us that like a little more kick!
