When oak gets really old and the bark begins to rot, can the heartwood still be used for cooking? I still have a quantity of red oak that is good on the outside, but the layer directly under the bark is really mushy. Need some info, please.

I just take a ax and knock the bad stuff off.

I second this, i think if its not moldy you should be fine but if you think it might affect your meat then split off the gunky stuff and use the good stuff.
