BAD "Q".. let this be a lesson to you!!

One of my favorites from my Marine Corps days, or at least what I told my guys:

"If you're not making mistakes, you're not trying hard enough. If you're making the same mistake twice, you're not learning."

Just kidding. But the fact is when you buy the best, you only cry once. And I think everyone has gotten complacient before and thought we could just throw together a quik BBQ and expect it to come out like when we plan everything to a T. Also I am my worst critic. If I don't think the Q kicks butt, EVERYONE KNOWS! And if someone trys to tell me how great it is when I don't think so, I do not take any credit. We just have to learn from our mistakes and remeber that good BBQ is an art form that not everyone can do.

I guess confession is good for the soul.....soooooo....I just ruined a good brisket also. The point was pretty good but the flat was rubbery. I will salvage the meat somehow...I hope.

And therein lies the rub. I have screwed up a batch of sausage or over smoked / overheated a hunk of meat a time or two myself. Being cheep I used to try to save it by mixing it into something else, beans, or something like that. About half the time this worked and the other half I end up with a whole bunch more of something bad.

Now days if it's bad it goes in the trash, some things aren't worth trying to save. Ever see a garbage sack full of overheated dry snack sticks? Oh well....
