I wrapped up some elk liver, no spice with some bacon and smoked it with some maple. It came out quite good. I lost my camera or I would have taken a few Qviews. Next time.
 
I don't bring home the elk liver anymore. My wife won't eat it but loves deer liver. Go figure. Sounds good wrapping in bacon. Maybe this year I'll save one.
 
I think the deer liver is sweeter than elk. The bacon seemed to tame the liver taste even though I dont mind it. Im considering doing a liver and onion fatty.
 
I just can't get into liver. I will have to say that I have never saved any of my wild game livers because when I have had beef liver I didn't like it at all. I would definately like to try deer or elk some time.
 
No pics it was never done. Interesting twist the last I remember I don't like liver. It has been a long time though and taste change. maybe?
