Well, I'll be honest, I just really wanted to smoke something this weekend. We had some boneless skinless thighs, which just don't usually smoke well (I assume because there is no protection for the meat). So we threw them and some legs in brine for a couple of hours, dipped them in some dry rub, wrapped them in bacon, and they are smoking as we speak. Hopefully they will turn out good. I only had Chicken turn out super good once, and I don't remember what I did. So we are trying to recreate that, only with bacon! Which, as we all know, makes everything better.
