I haven't done these in a while and it was a staple for me for a late nite dinner.





I dry cured them in Tender Quick according to directions on the bag 1TBS per pound for about 6 hours, rinsed and wrapped in turkey bacon, and some garlic and lemon pepper.



Beautiful night to be smokin'.




At 147' with the MES window view.

I don't think I have yet, but, I'll have to try the TQ on chix pieces sometime...that does sound good!

Love the outdoors shot, reminds me of those clear beautiful Arizona nights.
Just ordered some Tender Quick from Morton (can't get it anywhere around here) so I can't wait for it to arrive so I can start experimenting.
You got me itching to try out some capicola.
Can't wait to see how the chicken turns out, love the turkey bacon addition.

Moist, tender, and juicy. I Had to have one. As usual reccomended.

I smoked at 225' with cherry and hickory, and the last hour at 275'. The skin was still rubber but that's fine by me.

If you haven't tried TQ you are certanly missing out IMHO.
 
what is the advantage of curing the chicken? My chicken thighs dont take very long at all so they dont stay in the danger zone for more than an hour... Are you using the TQ for the taste? Did you rinse them after using the TQ? thanks in advance ron and as always your food looks awesome
 
The TQ does a lot of things. Flavor is one, texture is another, and they are juicier. Not sure how it works, but it does and I like it. Maybe others won't I don't know.



I did a comparison a whle back and here were the visual results.
The one on the left was plain, on the right was TQ.
Good questions.
