Bacon, Does this look OK??

  1. Hello.

    I haven't done bacon in a while and I may be having a brain fart.

    I had this bellys in Pop's brine for 12 days.  Pulled them out today, rinsed them off and trimmed a high area off one of the pieces.

    Really red ?? is this OK or should I throw them back in the brine for a few more days?? Thanks Mike

  3. OK Thanks!!   I injected  that really thick part on the belly early on also.  Guess I was just second guessing things.

    Rotating the hunks every few days, while it is in the brine, is a good thing to do....

    The color is normal. Here are a few butts right out of the brine.
